Why the numbers run this high
Chipotle cooks in small batches without preservatives, and salt is doing most of the seasoning work in the absence of them. The rice is salted and finished with lime; the salsas are salted to bring raw vegetables forward; the tortilla contains salt as a structural ingredient. None of this is unusual for prepared food, and it is why a meal built entirely from recognisable ingredients still clears two-thirds of a day's sodium.
